I wish we were able to ride Journey to the Center of the Earth more than once - it's amazing! Loved ToT & Beauty and the Beast, was able to do those a few times. Also the reserved seating FP for the nighttime parade was WELL worth it; it was incredible seeing everything without feeling claustrophobic and getting great views

Ok so because we booked a vacation package we had to book dining and stuff already so we have:

TDL:
Center Street Coffehouse
Enchanted Tale of BaTB
Eastside Cafe
4 "eligible attractions" passes (sounds like we should spend this on Pooh, Haunted Mansion and Monster's definitely)

TDS:
Peter Pan's Neverland Adventure
Anna and Elsa's Frozen Journey
Rapunzel's Lantern Festival (all 3 back to back)
Restaurant Sakura for lunch
Magellan's for dinner
Journey to the Center of the Earth untimed, and one "eligible attractions" pass at TDS (20k Leagues or Indiana Jones)

We'll need to pay for Believe!, ToT, Tokyo Disneyland Electrical Parade and Reach for the Stars?

In order to ride it twice, I ran to it first thing at opening and also got a FP for it. It's one of my favorite rides anywhere.

Also of all the new Fantasy Springs rides, Peter Pan was my favorite. I thought it was perfect and rode it over & over (wait times drop quite a bit at night).

You can skip/rebook Eastside Cafe. I've heard it's pretty forgettalbe. Center Street is fun for the vibes (lots of big band music/Aristocat touches) and the Baymax curry.

Don't waste an eligible attraction pass on Mansion. Its capacity is enormous and can handle even the typical Tokyo crowds. Just hit it in the morning or evening (or use an available free pass on the day). If anything, save that extra eligible pass for Monsters or Pooh a second time, as they tend to sell out first amongst the "free" FastPasses (which I understand is also being wound down - not sure what the end date is).

If Indiana Jones is back open, I'd recommend using your eligible pass there. 20,000 Leagues waits topped out at 50 minutes while we were there, but I suspect the actual wait was closer to 30-35. It was also extremely quiet in the morning and evening, so easy to get on it at other times.

Your DisneySea restaurant choices are perfect. We did the Italian full service (the name escapes me) near the Venetian Gondolas, which was excellent, but I've also heard Sakura is really great. Magellan's was a dream.

Honestly we’re just trying to burn the tdl lunch, the vp options weren’t great and I mainly wanted to try some qs/snacks but we’re locked into booking a lunch.

Go to the lounge in the S.S Columbia if you can! Great drinks and atmosphere.
