The same reason the Indy ride over in Japan doesn't break down as much as here in the states

They want to make the best product they can, while here its all about money. If it costs too much in the US, who cares if the guest suffer they will come back because we are the only place with a Nintendo land

Because it's the only park the land was designed around.

I'm doubtful of that, since USH hasn't had issues nearly to the same degree. It is more likely attributed to the fact that Epic Universe has more complex attractions that require constant maintenance, and their resources are spread more thin.
