Epic Universe Special/Unique Experiences?

We will be visiting Epic Universe this coming weekend for my daughter's 11th birthday and I was wondering if there were any unique/special type experiences to seek out. We have been to Epic a few times previously, but this will be our first time staying at Grand Helios. I haven't kept up too much on the current ongoings of EU and didn't know if anything new might fit the bill of a special Birthday memory.
